GARLIC GRILLED SIRLOIN
Steakhouse Restaurant Recipe
Serves 4
1 cup peeled garlic (cloves from 2 large heads of garlic)
1 cup grapeseed or canola oil
1 tablespoon black pepper
1 tablespoon fresh thyme leaves, chopped, or 1 teaspoon dried thyme
1 tablespoon oregano, chopped, or 1 teaspoon dried oregano
4 (8 oz.) sirloin steaks, about 1 inch thick
salt to taste
In a small pan over medium heat, simmer the cup of garlic in the oil until the garlic is tender, about 30 minutes. When it is cool, pour it into a food processor bowl and puree until smooth. Pulse in the pepper, thyme, and oregano. Coat the steaks with this garlic mixture and leave them covered for 8 to 12 hours in the fridge. An hour before serving, remove the steaks from the fridge and season them with salt. Preheat a greased ridged grill pan or a greased cast iron skillet. Cook the steaks for 4 to 5 minutes on each side for medium rare.
